  • Pork Blood 30 oz
  • Hard Cheese 5 oz
  • Breadcrumbs 0 oz
  • Whole egg 1 piece
  • Garlic 2 cloves
  • Vegetable Oil 3 tablespoons
  • Parsley to taste
  • Mixed salad greens to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the pork, pat dry, and cut into portion-sized pieces no thicker than 1.5 cm. Then, pound with a kitchen mallet, season with salt and pepper to taste. Fry in well-heated vegetable oil for 1 minute on each side.

Step 2

Grate the hard cheese, add the breadcrumbs, vegetable oil, minced garlic, and finely chopped parsley. Add the egg yolk and mix thoroughly.

Step 3

Place the fried escalopes on a baking sheet and spread the prepared mixture on top. Bake in the oven at 390°F for about 10–15 minutes. Serve on salad leaves.
