Pork Chops in Orange-Mustard Sauce

Ingredients

  • Pork chop with bone 4 pieces
  • Orange Syrup 2 tablespoons
  • Orange juice concentrate 5 fl oz
  • Dijon Mustard 1 tablespoon
  • Fresh Rose Hips 2 sprigs
  • Spanish onions 1 head
  • Freshly squeezed orange juice 2 tablespoons
  • Olive Oil 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 200 °C (400 °F). In a small saucepan, combine the orange juice, jam, and mustard. Place over medium heat and bring to a boil. Reduce heat and simmer, stirring, for 15 minutes until the sauce thickens slightly.

Step 2

Peel and slice the onion into wedges. Season the pork with salt and pepper. Heat a large ovenproof skillet with olive oil over medium heat. Add the chops to the skillet and sear for 5 minutes on each side until browned.

Step 3

Add the rosemary and onion to the skillet and pour the sauce over. Transfer the skillet to the oven and bake for 10 minutes.

Step 4

Transfer the pork and onion to a serving dish, removing the rosemary. Return the skillet to the stovetop over high heat and add the lime juice. Cook, stirring, for 4–5 minutes until the sauce thickens slightly. Drizzle the sauce over the pork and serve immediately.
