Ingredients

  • Pork Skewers 4 pieces
  • Olive Oil 4 tablespoons
  • Tomatoes 20 oz
  • Garlic 3 cloves
  • Fresh basil leaves 3 pieces
  • Chopped Sage Leaves 1 teaspoon

Step-by-Step Guide

Step 1

Using a knife, make cuts along the fat side of the pork chops, about 5 mm apart around the edge. Rub the meat with 1 tablespoon of olive oil and generously sprinkle with spices.

Step 2

Make cross-shaped cuts on the tomatoes and place them in boiling water for 30 seconds. Then transfer them to cold water and remove the skin. Chop the tomatoes finely.

Step 3

Heat 2 tablespoons of oil in a pot over low heat and add the minced garlic. Sauté for 1-2 minutes, then add the tomatoes, salt, and spices. Increase the heat, bring to a boil, and cook for 5 minutes until thickened. Add the basil.

Step 4

Heat the remaining oil in a large skillet. Sear the chops over medium heat for 2 minutes on each side. Stack the meat in the center of the skillet and pour the sauce over the top, immediately covering with a lid.

Step 5

Cook on low heat for about 5 minutes. Before serving, sprinkle with parsley.
