Description
Pork can be considered the main meat in Russian cuisine. It is affordable, uncomplicated, and it takes a lot to ruin it during cooking. Mustard is the perfect companion for pork: its sharp, mildly sweet, and sometimes tangy flavor balances the meat's richness and helps achieve the right harmony. A quick marinade of 5–10 minutes is quite acceptable, but it’s better to let the pork marinate in mustard overnight in the refrigerator for even more tender meat.
Ingredients
- Pork tenderloin 20 oz
- Chicken Egg 4 pieces
- Wheat Flour 5 oz
- Water 5 fl oz
- Dijon Mustard 0 oz
- Vegetable Oil 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Beat the eggs with salt, then add the flour and mix until smooth. Next, add water and mix again.
Step 2
Cut the meat into pieces about 2 cm thick and pound it with a meat mallet. Season the meat with salt and pepper on both sides and rub it with mustard. Let it marinate for 5–10 minutes.
Step 3
Heat vegetable oil in a skillet. Dredge the meat in flour; this helps the batter adhere better to the cutlets. Then dip them in the batter and place them in the skillet. Fry over medium heat for 8–10 minutes on each side.
Step 4
Place the cooked cutlets on a paper towel to remove excess fat.
