Pork Braised in Red Wine and Milk Italian Style
Ingredients
- Butter 3 tablespoons
- Pork tenderloin 5 lbs
- Rosé Dry Wine ⅔ cup
- Milk 0 qt
- Dried Rosemary to taste
- Lemon-Pepper Mix to taste
- Salt to taste
Step-by-Step Guide
Step 1
Heat the butter in a heavy-bottomed skillet (a Dutch oven can be used).
Step 2
Sear the whole piece of pork in the heated skillet with butter for 3-5 minutes on each side until a golden crust forms. At the same time, sprinkle the already browned sides with salt and pepper mix directly in the skillet.
Step 3
Now transfer the meat along with the butter to a deep dish (if initially seared in a Dutch oven, leave it there). Pour in half of the prepared wine, add the dried rosemary. Let the wine evaporate over medium heat for about 10-15 minutes without a lid, then turn the piece over, pour in the remaining wine, and let it evaporate for another 10-15 minutes.
Step 4
Bring the milk to a boil and pour it over the pork, bring to a boil again, reduce the heat to minimum, cover with a lid, and let it braise for 1.5 hours (after about 45 minutes, you can turn the meat if it is not fully covered with milk, and continue the process).
Step 5
Slice the meat into serving pieces.
