Pork belly with apple and cinnamon sauce
Ingredients
- Salted pork belly 5 lbs
- Ocean salt 0 oz
- Meyer Lemon Juice 3 tablespoons
- Garlic 2 cloves
- Vegetable Oil 5 tablespoons
- Apple 3 pieces
- Cinnamon 1 teaspoon
- Water 4 tablespoons
Step-by-Step Guide
Step 1
Make cuts on the skin. The cuts should be deep enough not to reach the meat, otherwise, it will burn. Make the cuts about one centimeter apart.
Step 2
Transfer the meat to a baking dish. Generously rub the skin with sea salt, add grated garlic and lemon juice on top. Then drizzle the skin with vegetable oil and spread it evenly with your hands.
Step 3
Place the pork belly in the oven on convection mode at 430°F for 25–30 minutes.
Step 4
After 25 minutes, the skin will start to brown intensively. Change the temperature setting: set it to 285°F on convection mode for 1.5 hours.
Step 5
Prepare the sauce. Cut the apples into medium wedges, peel and core them, placing them in a pot, add water (3–4 tablespoons), cover with a lid, and simmer for 10–15 minutes. The apples should become soft (they are ready when they start sticking to the bottom).
Step 6
Final stage of cooking the meat. Set the oven back to 430°F for 15 minutes to finish the crust.
Step 7
The apples are ready. Add a teaspoon of cinnamon to them. Meanwhile, you can take the meat out of the oven.
Step 8
Serve with apples as a side dish.
