Pork and sausage stew with chickpeas
Ingredients
- Hunter's Sausages 20 oz
- Pitted olives 5 oz
- Pork Neck 0 lbs
- Leek 1 stalk
- Oranges 2 pieces
- Onion 2 heads
- Tomatoes 4 pieces
- Garlic 4 cloves
- Parsley 0 oz
- Paprika 1 tablespoon
- Saffron a pinch
- Apple Wine 15 fl oz
- Wheat Flour 1 tablespoon
- Chickpea 30 oz
- Chicken Broth 0 qt
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Sauté the pork, cut into large pieces, in olive oil.
Step 2
Add the finely chopped onion and sauté for five minutes, stirring occasionally. Then, add the finely chopped leek, garlic, and grated seedless tomatoes. Cook for another five minutes, then add the wine and simmer for another ten minutes. Finally, add the broth, sweet paprika, olives, sausages, and the zest and juice of the oranges, and cook for fifteen minutes.
Step 3
Add a tiny pinch of saffron — just the tip of a knife — to the stew, stir, and simmer for another five minutes.
Step 4
Melt the butter in a saucepan and toast the flour in it until golden brown. Use this flour to thicken the stew, season with salt and pepper, sprinkle with chopped parsley, stir in the chickpeas, and simmer for another five minutes.
