Description
Instead of beef fat, it's better to use beef bone marrow: it will be even tastier.
Ingredients
- Beef 10 oz
- Fatty Beef 5 oz
- Kohlrabi 10 oz
- Olive Oil 0 fl oz
- Lime Juice 0 fl oz
- Wasabi 0 oz
- Mirin 0 fl oz
- Young Spinach "Belaya Dacha" 0 oz
- Vegetable Oil 1 tablespoon
- Hamburger Bun 4 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pass the beef once through the coarse plate of a meat grinder, and do the same with the fat. Mix the ground meat and beat it well to incorporate air. Let it rest in the refrigerator for half an hour.
Step 2
Slice the kohlrabi into thin strips. For the dressing, combine olive oil, chopped wasabi shoots, lime juice, and mirin.
Step 3
Form the patties from the minced meat using a cooking ring. Fry in vegetable oil for two and a half minutes on one side, then flip, season with salt and pepper, and cook for another two and a half minutes. (This will result in a medium doneness; for medium rare, just a couple of minutes on each side is sufficient.)
Step 4
Slice the rolls in half. On the bottom halves, layer the spinach, then the patties, add the kohlrabi, and drizzle with the wasabi dressing — and top with the upper halves of the rolls.
