Poor Man's Oysters
Ingredients
- Frozen White Mushrooms 15 oz
- Canned Tomatoes (Pelati) 1 can
- Onion 1 piece
- Lemon ½ piece
- Adjika ½ teaspoon
- Garlic 2 cloves
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour a couple of tablespoons of vegetable oil into a hot skillet, crush two cloves of garlic, and add half a teaspoon of spicy adjika.
Step 2
Finely chop the onion, add it to the skillet, and sauté in the vegetable oil.
Step 3
When the onion is ready, add one 400 g can of diced Italian tomatoes, 250 ml of water, and bring to a boil.
Step 4
Add the mussels (without thawing) to the skillet (400 g package), stir, and bring to a boil again.
Step 5
Reduce the heat, add salt and pepper, squeeze in the juice of half a lemon, cover with a lid, and simmer for 4–6 minutes.
Step 6
Discard any mussels that do not open.
