
Poltava Dumplings

Description
Dumplings can easily be confused with gnocchi, as both are found in soups. However, dumplings can also be enjoyed without broth, for instance, simply sautéed with bacon, as in our recipe.
Ingredients
- Kefir 5 fl oz
- Chicken Egg 1 piece
- Wheat Flour 15 oz
- Activated Baking Soda ½ spoons
- Salted pork belly 5 oz
- Onion 1 head
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Combine the kefir, egg, baking soda, and a pinch of salt.
Step 2
Sift the flour.
Step 3
Knead the dough, cover it with plastic wrap, and let it rest for 20 minutes.
Step 4
Cut the fatty pork into small cubes and add them to the frying pan. Start cooking over low heat to render the fat, then you can increase the heat.
Step 5
When the cracklings are golden, add the diced onion and sauté for another 4–5 minutes, until the onion turns a golden color.
Step 6
Season with salt and pepper to taste.
Step 7
Lightly dust the countertop with flour. Roll the dough into a sausage shape about 2 cm in diameter.
Step 8
Slice it into round pieces about 1 cm thick.
Step 9
Drop the dumplings into the boiling salted water and cook for 2–3 minutes.
Step 10
Mix the cooked dumplings with the prepared cracklings and serve immediately.
