Ingredients
- Salt a pinch
- Water 5 fl oz
- Corn Flour for Polenta 5 oz
- Sun-Dried Tomatoes 0 oz
- Garlic 2 cloves
- Tomatoes 3 pieces
- Basil 1 bunch
- Thyme 1 bunch
- Ground Black Pepper to taste
- Olive Oil to taste
- Capers 4 tablespoons
Step-by-Step Guide
Step 1
First, prepare the polenta. To do this, in boiling salted water, gradually add the cornmeal while stirring constantly and cook for 10–15 minutes. At the end, add the diced sun-dried tomatoes.
Step 2
Form small patties from the polenta and grill them until a crust forms.
Step 3
Prepare the sauce: chop the fresh peeled tomatoes into large cubes, lightly sauté them in olive oil with chopped garlic and thyme, then add the julienned herbs and capers.
Step 4
Serve the polenta and sauce separately or together, garnished with fresh basil florets.
