Polenta with Mushrooms

Ingredients

  • Pickled Chanterelles 10 oz
  • Polenta 10 oz
  • Water 0 qt
  • Scallions 2 pieces
  • Crushed Tomatoes in Their Own Juice 10 oz
  • Garlic 1 clove
  • Parsley 1 bunch
  • Saffron ½ teaspoon
  • Thyme to taste
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Slowly pour the polenta into a pot of boiling salted water, stirring constantly. Cook on low heat for 1–2 minutes, continuing to stir.

Step 2

Transfer the polenta to a greased baking dish (about 1–2 cm thick). Let it sit.

Step 3

Sauté the garlic clove and finely chopped onion. Wash the mushrooms, cut them into pieces, add them to the pan, and sauté. Add the crushed tomatoes, saffron, salt, and pepper to the pan. Simmer over medium heat for about 10 minutes. Finely chop the parsley and add it to the mushrooms at the end of cooking along with the thyme.

Step 4

Top the polenta with the mushrooms.
