Ingredients
- Skate Fillet 25 oz
- Orange juice concentrate 25 fl oz
- Citrus Zest Mix 1 teaspoon
- Lime Juice 5 fl oz
- Grated Ginger Root 1½ teaspoons
- Chives to taste
- Lime 1 piece
Step-by-Step Guide
Step 1
Combine the grated lemon zest, orange juice, lime juice, and ginger in a pot. Bring to a boil.
Step 2
Add the skate fillet, reduce the heat, and cook for 5 minutes. Carefully transfer the skate to serving plates and keep warm, covering with foil.
Step 3
Increase the heat again and cook until the sauce reduces by half, about 10-15 minutes, uncovered (the sauce should have a syrup-like consistency). Drizzle the sauce over the fish. Serve, garnished with chives and lime wedges.
