Poached Cod with Asparagus and Wine-Lemon Sauce
Ingredients
- Lemon 1 piece
- Dry White Wine 10 fl oz
- Corn Starch 2 teaspoons
- Shallot 1 head
- Bay leaf 1 piece
- Green peppercorns 5 pieces
- Cod fillet 20 oz
- Salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
- Tarragon 4 sprigs
- Asparagus 25 oz
- Water 5 fl oz
- Butter 2 tablespoons
Step-by-Step Guide
Step 1
In a saucepan, squeeze the juice from half a lemon, add the wine, cornstarch, chopped shallot, bay leaf, and black peppercorns. Bring to a boil, reduce the heat, and simmer until the volume is reduced by half and the sauce thickens, about 10–12 minutes.
Step 2
Meanwhile, season the fish with 0.25 teaspoon of salt and pepper and cut it into 4 pieces. Place a sprig of tarragon on each piece. Thinly slice the remaining lemon into rounds. Lay the lemon slices on top of the fish.
Step 3
Place the asparagus in a skillet and add water. Lay the fish on top and bring to a boil over medium heat. Cover and cook for about 4–5 minutes until the asparagus and fish are cooked through.
Step 4
Strain the sauce through a sieve into a bowl. Then transfer it back to the saucepan. Over low heat, add the butter and let it melt. Add the remaining salt and remove from heat.
Step 5
Transfer the fish and asparagus to plates and drizzle with the sauce.
