Ingredients

  • Green Plantain 15 oz
  • Canola Oil 2 tablespoons
  • Black peppercorns 2 tablespoons
  • Sesame Seeds 1 tablespoon
  • Black Mustard Seeds 1 teaspoon
  • Goat cheese 1 tablespoon
  • Coarse Salt to taste

Step-by-Step Guide

Step 1

Bring water to a boil in a large pot. Boil the plantain until soft, about 10 minutes. Drain the water; reserve 1 cup of the water used for boiling the plantain.

Step 2

Heat the oil in a large skillet over medium heat. Sauté the pepper and sesame until fragrant and reddish-brown, about 1-2 minutes. Let cool slightly and transfer to a spice grinder; grind to a paste. Return to the skillet. Sauté the mustard seeds until they start to pop, about 30 seconds.

Step 3

Add the urad dal and sauté until golden brown, about 30 seconds. Add the prepared plantain, the reserved cooking water, the spicy paste, muraya leaves, and salt; bring to a boil. Reduce the heat to medium and cook for 2-3 minutes, stirring occasionally, until thickened.
