Ingredients

  • Sugar 1 tablespoon
  • Salt ½ teaspoon
  • Olive Oil 3 tablespoons
  • Wheat Flour 3 cups
  • Water 1 cup
  • Dry yeast 0 oz
  • Green pickled tomatoes 15 oz
  • Garlic 3 cloves
  • Dried Chamomile 1 teaspoon
  • Cheese Spread 15 oz
  • Arugula 1 bunch
  • Salted pork belly 15 oz

Step-by-Step Guide

Step 1

Prepare the dough: in warm water in a large bowl, dissolve the sugar and salt, add the yeast, mix, cover, and let sit for 10 minutes. When the yeast is foamy and bubbly, add the olive oil.

Step 2

Sift the flour and add it to the yeast mixture, gradually kneading the dough first with a fork, then with your hands. When a homogeneous mass forms, sprinkle the table with flour and knead the dough for 10 minutes until it reaches a smooth, elastic state.

Step 3

Dust a deep bowl with flour, place the dough inside, cover, and put it in the oven at the lowest temperature (about 35-105°F) to rise for 20-30 minutes. It should double in size.

Step 4

For the tomato sauce, peel the tomatoes and blend them. Heat oil in a pan, sauté finely chopped garlic for 2-3 minutes, and add the tomato puree. Add sugar and salt, mix. After boiling, reduce the heat and cook for 10-15 minutes until thickened. A couple of minutes before it’s done, add the marjoram.

Step 5

Divide the dough into two parts. Form a ball from each, sprinkle the table with flour, and roll out with a rolling pin to a thickness of 5 mm. Don’t worry about the evenness of the edges.

Step 6

Grate the cheese coarsely, cut the bacon (or whatever you have) as desired, wash the arugula, dry it, and mix it with olive oil.

Step 7

Preheat the oven well to the maximum temperature (at least 480°F).

Step 8

Line a baking sheet with parchment paper, sprinkle with flour (no oil needed), place the dough, and stretch it slightly with your hands. Spread the sauce evenly over the entire surface of the dough, sprinkle with cheese, and place pieces of bacon (or whatever you have). In the empty spaces, place arugula leaves. Bake for 10-13 minutes.

Step 9

The finished pizza can be sprinkled with herbs (you can also add arugula now instead of baking) and drizzled with olive oil. Although it is already very delicious as is.
