Description

Originally, piri-piri refers to chicken that is prepared using the marinade from this recipe. It is cooked similarly to how one prepares tabaka chicken. The chicken is coated with the marinade and cooked under a weight in a skillet. Then it is baked with vegetables in the oven.

Ingredients

  • "Petelinka Thigh Fillet" 0 lbs
  • Spanish onions 1 head
  • Orange Bell Peppers 1 piece
  • Chili Flakes to taste
  • Lemon 1 piece
  • Dried Rosemary 1 tablespoon
  • Smoked salt 1 tablespoon
  • Garlic 3 cloves
  • Olive Oil 5 fl oz
  • Red Wine Vinegar 0 fl oz
  • Brown Sugar to taste
  • Canned Pork with Beans 1 can
  • Canned Jalapeño Peppers 1 can
  • Marinated cherries 5 oz
  • Parsley to taste

Step-by-Step Guide

Step 1

For the marinade, roughly chop the red onion and garlic.

Step 2

Remove the white veins and seeds from the pepper and cut it into large pieces.

Step 3

Grate the lemon zest and squeeze the juice from half of the lemon.

Step 4

In a food processor, blend the onion, garlic, pepper, paprika, oregano, vinegar, lemon zest, lemon juice, and olive oil. Add chili flakes or chili powder to taste. If you like it spicy, use a small chili without seeds. I add a teaspoon of mild chili powder. Taste and if necessary, add a bit of brown sugar and blend again.

Step 5

Pour this mixture over the chicken, mix well, and place it in the refrigerator for 1 hour.

Step 6

Remove the chicken and shake off the excess marinade back into the container where the chicken was marinated; it will be useful later. Heat a skillet or wok until hot and add the pieces of chicken, frying them until they are covered with a crispy crust (this requires minimal marinade on the chicken); otherwise, they will stew in it.

Step 7

Preheat the oven to 355°F.

Step 8

Drain the liquid from the can of beans and rinse them (I use black beans for color) — you can use any white, red, etc.

Step 9

In a baking dish, place the pieces of chicken, cherry tomatoes, beans, and the marinated bell pepper cut into large pieces (the ideal and original option is canned roasted pepper).

Step 10

Mix well and bake for 30 minutes until cooked through.

Step 11

Serve, garnished with finely chopped parsley.
