Pilaf with Chickpeas

Ingredients

  • Deodorized refined vegetable oil 3 tablespoons
  • Carrots 3 pieces
  • Basmati rice 10 oz
  • Vegetable Broth 25 fl oz
  • Chickpeas 5 oz
  • Almond Flakes 0 oz
  • Sweet Paprika to taste
  • Asafoetida a pinch
  • Coriander Seeds to taste
  • Cumin Seeds to taste
  • Turmeric to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Heat the oil in a heavy-bottomed pot (ghee can be used instead of vegetable oil).

Step 2

Sauté the grated carrots and spices.

Step 3

Then add the rice and sauté as well.

Step 4

Pour in the broth (water can be used instead of broth), and add salt.

Step 5

Bring to a boil and cook covered on low heat for about 15–20 minutes.

Step 6

5 minutes before the cooking is done, add the pre-cooked boiled chickpeas.

Step 7

When serving, sprinkle with almond flakes (if almond flakes are not available, you can use cashew flakes or omit them altogether).
