Pide with Lamb and Garlic Hummus

Ingredients

  • Meyer Lemon Juice 1½ tablespoons
  • Olive Oil 1 tablespoon
  • Lamb Neck Fillet 4 pieces
  • Ground Cumin 1 teaspoon
  • Garlic 1 head
  • Chickpea 5 oz
  • Pide bread 4 pieces
  • Yogurt powder 1 tablespoon
  • Potato 1 piece
  • Arugula 1 bunch
  • Spices to taste

Step-by-Step Guide

Step 1

Mix 1 tablespoon of lemon juice, cumin, olive oil, and spices. Add the meat, mix, and let marinate for 1 hour.

Step 2

Preheat the oven to 410°F. Wrap the head of garlic in foil and roast for 20 minutes until soft. Cool and extract the pulp from each clove. Blend the garlic and chickpeas with the remaining lemon juice and yogurt. Add a little water and spices as needed.

Step 3

Grill the meat for 3 minutes on each side. Toast the pide bread and cut it in half. Spread the hummus and top with a piece of meat. Garnish with sliced tomato and arugula leaves.
