Description
Serve the heart kebabs with a mix of salad greens, peeled segments of fresh oranges, and red onions pickled in vinegar and sugar.
Ingredients
- Beef hoof 15 oz
- Toasted Cumin Seeds 1 tablespoon
- Coarse Salt 1 tablespoon
- Green peppercorns ½ spoons
- Mild Chili Spice 2 pieces
- Garlic 1 clove
- Red Wine Vinegar 3 spoons
- Olive Oil 2 spoons
Step-by-Step Guide
Step 1
Dice the heart and place it in a bowl. In a small skillet, toast the cumin seeds for one minute, then grind them together with black pepper, deseeded chili, and garlic. Next, transfer everything to the bowl and mix with vinegar and olive oil.
Step 2
Pour the marinade into a bowl with the heart, mix well, cover with plastic wrap, and refrigerate for 24 hours.
Step 3
Preheat the grill. Skewer the slices of heart onto skewers and grill for four minutes, turning once.
