Perfect Khichari

Ingredients

  • Ground coriander 1 bunch
  • Basmati rice 1 cup
  • Ghee 1 tablespoon
  • Desiccated coconut 2 tablespoons
  • Ground clove 5 pieces
  • Turmeric 1 teaspoon
  • Grated Ginger Root 1 tablespoon
  • Green peppercorns 10 pieces
  • Bay leaf 1 piece
  • Water 4 cups
  • Mung Beans 1 cup
  • Cinnamon 1 piece
  • Cardamom 5 pieces
  • Rock Salt to taste

Step-by-Step Guide

Step 1

Rinse the rice and mung beans until the water runs clear.

Step 2

Heat the ghee in a pot over medium heat. Add the bay leaf, cinnamon stick, cloves, cardamom, 10 peppercorns, turmeric, stir and sauté until fragrant.

Step 3

Then pour hot water over the spices and add the rinsed rice and mung beans. Stir and cook uncovered for 5 minutes.

Step 4

Then cover with a lid, leaving a small gap, and cook for another 20–25 minutes until the rice and mung beans are cooked.

Step 5

Blend the ginger, shredded coconut, and cilantro with a little water until a liquid paste forms. Add to the pot with the other ingredients 5 minutes before cooking is complete and season with salt.
