
Pea Soup with Vegetables, Smoked Meats, and Croutons

Description
If you don't have a multicooker, soak the peas in water for 4–8 hours and then cook for 1–2 hours depending on the type of peas. Follow the instructions. It is preferable to sauté the vegetables and cook the pea soup in the same pot. The water level should be 3 fingers above the peas. During cooking, do not cover the lid completely, and if the water evaporates, add boiling water.
Ingredients
- Pea shoots 20 oz
- Onion ½ head
- Carrot 1 piece
- Olive Oil 2 tablespoons
- Semi-Smoked Sausage 5 oz
- Salt to taste
- Italian chopped parsley 2 tablespoons
- Ground clove to taste
- Country Bread 2 pieces
- Garlic 2 cloves
- Khmeli-suneli 1 teaspoon
Step-by-Step Guide
Step 1
Cook in a multicooker. This reduces cooking time, as the peas do not need to be soaked beforehand. If you don't have one, don't worry. See the instructions below. So, sort and rinse the peas (yellow or green).
Step 2
Dice the onion and carrot into small cubes. Cut the smoked bacon into small cubes similarly. The bacon can be replaced with cured meats, prosciutto, etc.
Step 3
Set the multicooker to the 'SAUTE' mode, type 'MEAT' for 15 minutes. Pour in a couple of tablespoons of oil and heat it up. Add the vegetables and sauté. After about seven minutes, add the smoked meats. Five minutes before the end, add the minced garlic. Turn off the multicooker. Transfer the sauté to a bowl.
Step 4
Add the peas and pour in water. The water level should be 2 fingers above the peas. Add salt and spices (pepper, khmeli-suneli). Close the multicooker. Set the 'STEW' mode for 2 hours.
Step 5
Meanwhile, make the croutons. Toast the pieces of bread in a heated skillet on both sides. Cut into small cubes.
Step 6
After the sound signal, turn off the device. The peas will be soft and mushy. Stir with a wooden (or plastic) spoon. If desired, you can blend it with a blender. Add the sautéed vegetables and bacon, as well as the chopped parsley.
Step 7
Serve in bowls and add the croutons.
