Pasta with shrimp, tomatoes, lemon, and spinach
Ingredients
- King Prawns 10 oz
- Citrus Zest Mix 2 teaspoons
- Red Long Chili Peppers a pinch
- Thyme 1 sprig
- Oregano 1 sprig
- Basil 1 sprig
- Olive Oil 2 tablespoons
- Garlic 2 cloves
- Marinated cherries 5 oz
- Spinach 5 oz
- Meyer Lemon Juice 2 tablespoons
- Pasta (corkscrew) 10 oz
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Mix half of the zest with ground red pepper, chopped herbs, a pinch of salt, and pepper. Sprinkle this mixture over the shrimp and let it sit for a while.
Step 2
Heat olive oil in a pan over medium heat. Sauté the garlic for about half a minute. Add the tomatoes and the remaining zest. Season lightly with salt and pepper. Simmer for about 2 minutes.
Step 3
Now lay the shrimp in a single layer and sauté for about 2 minutes on one side. Flip and cook for another minute or until the shrimp are heated through. Stir the tomatoes gently.
Step 4
Meanwhile, cook the pasta in salted water until al dente.
Step 5
Drain the pasta, but reserve half a cup of the cooking water. Pour it into the pan with the shrimp, and mix. Add the pasta along with the spinach leaves. Pour in the lemon juice.
Step 6
Season with salt and pepper. You can add more lemon juice when serving. Serve with crusty bread and grated Parmesan.
