Pasta with Roasted Vegetables
Ingredients
- Courgette 1 piece
- Carrot 1 piece
- Orange Bell Peppers 1 piece
- Olive Oil 2 tablespoons
- Salt to taste
- Garlic 2 cloves
- Scallions 3 stalks
- Red Long Chili Peppers 1 teaspoon
- Tomatoes 2 pieces
- Pasta (corkscrew) 2 cups
- Herbes de Provence 1 tablespoon
- Ground Black Pepper to taste
- Chopped almonds to taste
Step-by-Step Guide
Step 1
Preheat the oven to 200–400°F.
Step 2
In a bowl, mix the zucchini, carrot, and bell pepper.
Step 3
Add oil and salt to taste, and mix well.
Step 4
Spread the vegetables on a baking sheet in a single layer and roast for 15 minutes.
Step 5
Meanwhile, cook the pasta according to the package instructions, reserving 0.5 cup of the cooking liquid.
Step 6
Heat the remaining oil in a large saucepan or skillet over medium heat.
Step 7
Add the green onion and sauté for 1 minute.
Step 8
Add the garlic and ground red pepper, and cook for another minute.
Step 9
Add the tomatoes, herbs, and the reserved pasta cooking liquid. Simmer for a couple of minutes, stirring occasionally.
Step 10
Add the roasted vegetables and pasta, and mix thoroughly.
Step 11
Season with salt and pepper to taste, and serve topped with pistachios.
