- Broccoli 15 oz
- Pasta (corkscrew) 10 oz
- Farm fresh eggs 2 pieces
- Milk ½ cup
- Olive Oil 1 tablespoon
- Scallions to taste
- Grated Pecorino Pepato Cheese to taste
- Herbs to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the broccoli until slightly tender, and divide it into florets.
Step 2
Cook the pasta.
Step 3
In a heated skillet, pour in the olive oil, layer the pasta, then the broccoli.
Step 4
Pour the mixture of eggs and milk over everything (like for an omelet, but without flour). Season with salt and pepper. Top with herbs and grated Parmesan. Cover and simmer on low heat.
