
Pan-Seared Duck Breast with Berry Sauce

Description
You can also use raspberries or plums for the sauce. Any meat or chicken broth will work.
Ingredients
- Duck Breast 2 pieces
- Vegetable Oil 1 tablespoon
- Chicken Broth 5 fl oz
- Serviceberries 5 oz
- White Pepper (whole) to taste
- Salt to taste
- Honey 2 tablespoons
- Tkemali (plum sauce) 0 oz
- Apple 1 piece
- Water 5 fl oz
Step-by-Step Guide
Step 1
Using a sharp knife, remove the fillet from the breast.
Step 2
Prepare a marinade from boiled water, honey, and red tkemali sauce, and marinate the duck fillet for 1.5 to 2 hours.
Step 3
While the breast is marinating, prepare the broth for the sauce from the remaining duck.
Step 4
Salt the marinated breast, drizzle with vegetable oil, and sear in a pan for 3 to 4 minutes. Place on a plate.
Step 5
In the hot rendered fat in the pan, add the berries (80 g) that have been passed through a sieve or blended, add the broth, bring to a boil, and remove from heat.
Step 6
Pour the sauce over the fillet.
Step 7
Garnish with sweet and sour apple and remaining berries. Roasted vegetables can be served as a side dish.
