Ingredients
- Duck Skin 1 piece
- Rosemary 1 sprig
- Ocean salt to taste

Step 1
Let the duck breast sit at room temperature for about 5 minutes.
Step 2
Make incisions in the skin and season with salt.
Step 3
Place the breast skin-side down in a dry, hot skillet.
Step 4
Add rosemary to the rendered fat. Season with salt.
Step 5
Once the skin is browned, flip it over.
Step 6
Reduce the heat to medium and cook for another 3-4 minutes, basting with the fat.
Step 7
Transfer the breast to a cutting board and slice into medallions.
Step 8
Return the breast to the skillet. Increase the heat to just above medium.
Step 9
After 2 minutes, season with salt and flip.
Step 10
After 1 minute, remove from heat and place on a plate. Done!
