Pan-Seared Cod with Lentils
Ingredients
- Lentils 5 oz
- Cod fillet 25 oz
- Onion 1 head
- Garlic 2 cloves
- Butter 3 spoons
- Olive Oil 2 spoons
- Meyer Lemon Juice 1 tablespoon
- Parsley 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a heavy pot, melt two tablespoons of butter over low heat. Sauté the finely chopped onion and garlic, seasoned with 3/4 teaspoon of salt, until they turn a pale golden color, which will take about ten minutes (cook covered).
Step 2
Then remove the lid and cook for another five to ten minutes. After that, add the lentils and a bit of the liquid in which they were cooked to the vegetables; heat everything through well.
Step 3
Pat the cod fillet dry and season it with salt and pepper. In a sufficiently large non-stick skillet, heat one tablespoon of olive oil and one tablespoon of butter. Sauté the fish in the bubbling oil for six to eight minutes, making sure to flip it once. The cod should be lightly browned and fully cooked.
Step 4
Before serving, stir in the lentils the lemon juice, parsley, a quarter teaspoon of pepper, and a tablespoon of olive oil.
