Pad Thai with Lime

Ingredients

  • Soba Noodles 5 oz
  • Toasted Sesame 2 teaspoons
  • Scallions 4 pieces
  • Vegetable Oil 2 tablespoons
  • Garlic 2 cloves
  • Grated Ginger Root 1 piece
  • Soy Sauce 2 tablespoons
  • Lime ½ piece
  • Baby Bok Choy 1 bunch
  • Chicken Egg 1 piece

Step-by-Step Guide

Step 1

In a large pot, bring water to a boil. Add the noodles while stirring, bring to a boil again, and cook for 4 minutes. Drain and rinse with hot water.

Step 2

Heat a wok. In a dry pan, evenly toast the sesame seeds, then transfer to a plate to cool.

Step 3

Pour oil into the wok and coat the sides. Add finely chopped green onions, garlic, and grated ginger, and sauté for 20 seconds. Add the noodles, drizzle with soy sauce and lime juice, and stir-fry for 1–2 minutes.

Step 4

Add the chopped bok choy and stir-fry for about a minute. Beat the egg. Make a well in the center of the mixture and pour in the egg. Stir to combine, allowing the egg to thicken. Transfer the finished pad thai to a serving dish and serve.
