Ingredients
- Fish Oil 0 fl oz
- Raw cane sugar 0 oz
- Tamarind Paste 0 oz
- Garlic 4 cloves
- Rice Noodles 5 oz
- Vegetable Oil 5 fl oz
- Spanish onions 5 oz
- Chicken fillet 10 oz
- Chicken Egg 2 pieces
- Scallions 0 oz
- Peanut Sprouts 5 oz
- Cilantro 0 oz
- Roasted Peanuts 5 oz
- Lime 2 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Soak the rice noodles in warm water for 20 minutes.
Step 3
In a bowl, mix together the fish sauce and palm sugar.
Step 4
Add tamarind paste, 2 minced garlic cloves, and salt.
Step 5
Heat half of the vegetable oil in a wok and stir-fry the chicken, cut into thin strips, over high heat for 3-4 minutes. Transfer the cooked meat to a clean dish.
Step 6
In the same wok, heat the remaining oil and first sauté the julienned onion, then add the garlic. After half a minute, add the noodles, chicken, and sauce, and cook while stirring for 2 minutes.
Step 7
Then, move all the contents of the wok to one side and crack an egg into the empty side, stirring constantly as it cooks. Once the egg is done, mix it together with the rest of the contents in the wok.
Step 8
Add roughly chopped green onions, soy sprouts, and crushed roasted peanuts, and cook, stirring for another minute.
Step 9
Sprinkle with toasted peanuts and chopped cilantro.
Step 10
Serve with a wedge of lime.
