Tuna steaks should be about 4 cm thick.

  • Bonito tuna fillet 2 pieces
  • Olive Oil 0 fl oz
  • Orange juice concentrate 5 fl oz
  • Ground Black Pepper to taste
  • Dry White Wine 5 fl oz
  • Flaky sea salt to taste
  • Poppy seed paste to taste
  • Pear 1 piece

Step-by-Step Guide

Step 1

Marinate the tuna in a mixture of 50 ml of olive oil, 100 ml of orange juice, and 150 ml of white wine. You can add poppy seeds (if serving with pears in wine, they pair well together). Do not salt. Leave at room temperature for about 2 hours. Remove the tuna steaks from the marinade, wrap them in foil, and place in a baking tray in a preheated oven at 375°F for about 10 minutes. Do not overcook it — it should remain slightly rare inside! Remove the steaks from the oven and gently slice them. Sprinkle with coarse sea salt, add pepper, and if desired, serve with pears.

Step 2

For a quick pear garnish, cut the pear in half lengthwise and slice it thinly. Heat 50 ml of white wine in a pan and sauté the pears in it. The softer the pear, the less time it will take to cook. If the pears are fragrant, dry wine is a better choice.
