
Oven-Baked Sturgeon Medallions

- Sturgeon 25 oz
- Thursday Salt 0 oz
- Smoked salt 0 oz
- Fresh basil leaves 0 oz
- Tarragon 0 oz
- Dill 0 oz
- Parsley 0 oz
- Garlic 0 oz
- Lemon 0 oz
Step-by-Step Guide
Step 1
Clean and rinse the fish.
Step 2
Prepare the marinade for the fish: roughly chop the herbs, mix them with salt, garlic, and paprika.
Step 3
Rub the fish inside and out, and place herbs inside.
Step 4
Leave to marinate overnight.
Step 5
In the morning, vacuum seal the fish and store it in the refrigerator for 24 hours, at a temperature of 0/–1°C.
Step 6
After a day, remove the herbs from the cavity.
Step 7
Roll the sturgeon into a ring in a cast-iron skillet and place it in the oven at 180–390°F for 8–10 minutes.
Step 8
Serve with a bouquet of parsley, dill, and tarragon, along with lemon.
