Oven-Baked Sea Bass with Rosemary and a Side of Beans and Mango
Ingredients
- Chilean sea bass fillet 10 oz
- Mango 5 oz
- Kenyan Beans 5 oz
- Fresh Rose Hips to taste
- Toasted Sesame 1 teaspoon
- Orange zest 4 pieces
- Orange juice concentrate 2 tablespoons
- Olive Oil 1 teaspoon
- Balsamic Vinegar 1 teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Place the fillet in a baking bag with a sprig of rosemary, lightly sprinkle with coarse salt, and put it in the oven for 15 minutes.
Step 2
Steam the beans for 5–6 minutes, then immerse them in cold water after cooking (to prevent them from falling apart). Peel the mango, cut it into strips or mash it on top of the beans. Drizzle with a sauce made from orange juice, balsamic vinegar, and olive oil. Sprinkle with sesame seeds.
Step 3
Remove the fish and serve it on a plate with the side dish.
