Oven-baked pork knuckle
Ingredients
- Smoked pork knuckle 20 oz
- Garlic 1 head
- Tkemali to taste
- Mustard Greens to taste
- Salt to taste
- Ground Black Pepper to taste
- Safflower Oil 2 spoons
- Bay leaf 2 pieces
Step-by-Step Guide
Step 1
Make several incisions in the pork knuckle with a knife and stuff these openings with garlic (a quarter of a clove in each).
Step 2
In a mortar, grind the garlic, salt, pepper, and bay leaf. Add the oil and mix thoroughly. Rub the resulting mixture onto the knuckle.
Step 3
Mix a bit of tkemali sauce with mustard and coat the piece of pork hock. Ideally, let the hock marinate like this for 2 hours (or even better, overnight), but you can also cook it right away.
Step 4
Place the pork knuckle in a roasting sleeve and put it in a preheated oven at 210°F. Cook the meat at this temperature for half an hour, then increase the temperature to 200-430°F and cook for another hour and a half.
