Step 1
Rub the pork belly generously with salt on the skin side and place it in the refrigerator overnight, uncovered.
Step 2
Lightly salt the pork belly on the meat side, roll it tightly into a log with the skin facing out, and tie it with culinary twine.
Step 3
Place the roulade in an oven preheated to 265°F for 2.5 to 3 hours. The internal temperature of the meat should reach 145°F.
Step 4
Increase the oven temperature to maximum. The skin should bubble and become crispy. Let the cooked meat rest for a bit before serving.
