Oven-Baked Frittata with Swiss Chard
Ingredients
- Butter to taste
- Red Onion 1 piece
- Swiss Chard 5 oz
- Minced garlic 1 clove
- Canned Roasted Peppers 4 pieces
- Ricotta cheese 10 oz
- Chicken Eggs 4 pieces
- Grated Parmesan cheese 5 oz
- Herbs to taste
Step-by-Step Guide
Step 1
Preheat the oven to 220˚C (428˚F). Melt the butter in a large skillet and sauté the onion until soft.
Step 2
Add the Swiss chard and sauté for 5 minutes until soft. Add the garlic and peppers, sauté for 1 minute, and season with salt.
Step 3
Drain excess liquid from the skillet by pressing down on the contents with a spatula. Let cool for a few minutes.
Step 4
Mix the eggs with the ricotta and most of the Parmesan. Season with salt and add the Swiss chard and mint mixture.
Step 5
Pour the mixture into a round baking dish and sprinkle with the remaining cheese.
Step 6
Bake for 15-20 minutes until the center is set. Serve with a salad of greens.
