  • Celery stalk 2 pieces
  • Leek 1 piece

Prepare all the ingredients.

In a large pot, combine water with salt at a ratio of 50 grams of salt per 1 liter of water.

Add the bay leaf and allspice, bring to a boil, then remove from heat and allow to cool.

Submerge the chicken in the cooled brine and refrigerate it overnight.
