Ingredients
- Poultry 1 piece
- Water 5 qt
- Salt 5 oz
- Bay leaf 1 piece
- Allspice berries 3 pieces
- Butter 5 oz
- Sage 3 sprigs
- Thyme 3 sprigs
- Parsley 5 sprigs
- Garlic 2 cloves
- Ground Black Pepper to taste
- Carrot 2 pieces
- Celery stalk 2 pieces
- Leek 1 piece
Step-by-Step Guide

Prepare all the ingredients.
Step 2
In a large pot, combine water with salt at a ratio of 50 grams of salt per 1 liter of water.
Step 3
Add the bay leaf and allspice, bring to a boil, then remove from heat and allow to cool.
Step 4
Submerge the chicken in the cooled brine and refrigerate it overnight.
Step 5
Remove the leaves from the stems of the sage and thyme. Chop finely.
Step 6
Chop the parsley finely.
Step 7
Combine the softened butter with the chopped herbs, crushed garlic, and black pepper.
Step 8
Cut the carrot, celery, and leek into large pieces.
Step 9
Remove the chicken from the brine and pat it dry with a paper towel.
Step 10
Using your fingers, separate the chicken skin from the meat on the breast to create a pocket. Place the flavored butter into this pocket and spread it evenly. You can also rub a small amount of butter over the chicken, both inside and outside.

Place the vegetables on a baking sheet, top with chicken, and put it in a preheated oven at 375°F for 40 to 50 minutes.

Serve with mashed potatoes or another favorite side dish.
