Ingredients

  • Lamb Neck Fillet 5 oz
  • Mashed Potatoes 5 oz
  • Puff Pastry 0 oz
  • Pickled Chanterelles 0 oz
  • Bacon 3 pieces
  • Whole egg 1 piece
  • Spanish onions 1 head
  • Lamb Fat Netting 1 piece
  • Lingonberry 0 oz
  • Herbs 0 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Carefully place the mashed potatoes on the pastry sheets.

Step 2

Fold the pastry into an envelope: first, fold the bottom part to cover the mashed potatoes, then fold the sides from the other side and roll it up, leaving the top corner open.

Step 3

Brush the top corner with egg yolk for better sealing, and roll the spring roll completely.

Step 4

Fry the roll in hot oil.

Step 5

Meanwhile, finely chop the red onion. Crush the peeled garlic cloves and chop them with a sharp knife.

Step 6

Add the onion, garlic, and herbs to a bowl with the mushrooms and dress everything with vegetable oil. Mix well.

Step 7

Wrap the chopped ostrich meat in the fat netting, then wrap it in bacon — this will make the meat juicier and give it a finer taste and aroma when baked.

Step 8

Sear the meat on both sides in a hot pan greased with vegetable oil and then place it in the oven.

Step 9

Cut the rolls into different lengths.

Step 10

Stand them upright on a plate, placing the finished ostrich steak next to them.

Step 11

Drizzle the dish with lingonberry sauce and top with mushrooms. Garnish with herbs.
