Ingredients
- Zucchini 1 piece
- Olive Oil 1 tablespoon
- Chicken Eggs 4 pieces
- Frozen Green Peas ½ cup
- Grated Parmesan cheese 2 tablespoons
Step-by-Step Guide
Step 1
Trim the ends of the zucchini, then slice it into 3 mm thick rounds.
Step 2
Heat the oil in a small non-stick skillet (about 20 cm in diameter). Add the zucchini and sauté until golden brown.
Step 3
Crack the eggs into a bowl and whisk with a fork. Add a little salt.
Step 4
Add the peas, pour in the eggs, and sprinkle with cheese. Reduce the heat and cook for about 10 minutes.
Step 5
Meanwhile, preheat the broiler.
Step 6
Place the skillet under the hot broiler for a minute or two.
Step 7
Transfer to a cutting board or plate.
Step 8
Cut the omelet into wedges and serve warm, or let it cool and serve with a salad or coleslaw.

You can store it in the refrigerator for up to 3 days.
