- Sweet Red Onion 1 piece
- Butter 0 oz
- Olive Oil to taste
- Nutmeg to taste
- Ground Black Pepper to taste
- Salt to taste
- Green Peas 2 tablespoons
Step-by-Step Guide
Step 1
Chop the chorizo into small pieces, blend it with the oat milk, two cherry tomatoes, a pinch of nutmeg, black pepper, and salt. Blend until a thick, frothy mixture forms. In a separate bowl, mix the resulting mixture with the eggs using a fork until smooth.
Step 2
In a saucepan, melt the butter and bring it to a bubbling, slightly darkening state. Pour it into the egg and sausage mixture while constantly stirring with a fork.
Step 3
In a skillet, sauté the sweet onion greens in olive oil until semi-cooked, then set aside.
Step 4
Pour the resulting mixture into a heat-resistant glass dish, scatter the cherry tomato quarters and onion on top. Place the dish in a preheated oven at 355°F for 18 minutes.

Serve the omelet with chorizo, oat milk, and cherry tomatoes immediately, garnished with green peas.
