Octopus in Marinade
Ingredients
- Octopus 0 lbs
- Olive Oil 5 fl oz
- Malt Vinegar 1½ tablespoons
- Onion 1 head
- Green peppercorns 1 piece
- Green Peas 10 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a pot of water, add a bay leaf, bring to a boil, place the octopus in the pot for 1 minute, and then immediately remove it. When the water boils again, place the octopus in the pot for another minute. Repeat this process three times and on the fourth time, let the octopus cook for 45 minutes.
Step 2
While it cooks, prepare the marinade: mix the oil and vinegar in a bowl, season with salt and pepper. Finely chop the onion and dice the peeled pepper. Add the vegetables to the oil and vinegar mixture, stir, and set aside.
Step 3
Drain the water from the octopus and rinse it under cold water. Remove any dark spots from the skin and cut the meat into medium-sized pieces using kitchen scissors.
Step 4
Place the octopus in a bowl, pour the vinaigrette over it, and add the peas. Cover the bowl and let it marinate in the refrigerator, stirring occasionally, for 2 hours before serving.
