Nudi with Cheese and Tomato Sauce
Ingredients
- Ricotta cheese 2 cups
- Large Chicken Egg 1 piece
- Egg Yolk 1 piece
- Ground Black Pepper 1 teaspoon
- Grated Parmesan cheese 0 oz
- Salt 1 teaspoon
- Wheat Flour 1 cup
- Tomato Sauce 3 cups
Step-by-Step Guide
Step 1
Thoroughly mix the ricotta, egg, egg yolk, pepper, 1/2 cup of parmesan, and 1/2 teaspoon of salt in a large bowl. Add 1/2 cup of flour, mix well, and form into a ball (the mixture should be soft and moist with bits of ricotta; if the mixture is too wet, add a tablespoon of flour).
Step 2
Dust a baking sheet with flour. Using 2 tablespoons, shape pieces of dough into an oval form (similar to a rugby ball); place the nudi on the baking sheet and sprinkle with flour (you should get about 30 pieces).
Step 3
Boil the nudi in a large pot of salted boiling water, stirring occasionally, until cooked for 5–6 minutes (the nudi will float almost immediately, but this is not an indicator of doneness: they must be boiled for the required time, otherwise the centers will remain raw).
Step 4
Using a slotted spoon, remove the nudi and arrange them on plates. Drizzle with tomato sauce and sprinkle with parmesan.
