Step 1
Heat vegetable oil in a large skillet — any kind you have on hand. Add the seafood directly from the freezer — shrimp, mussels, squid, and other sea creatures. This is what is commonly sold in our stores under the name 'seafood mix.' Cook for about fifteen minutes: all excess moisture should evaporate. Add soy sauce and stir.

Cook the rice noodles according to the package instructions until tender, then drain in a colander.
Step 3
Transfer the noodles to a skillet and combine them with the seafood and soy sauce. It usually takes about fifteen minutes of simmering over low heat for the flavors to meld together. Serve immediately.
