Mussels with Sauce and Homemade Chips
Ingredients
- Olive Oil 1 tablespoon
- Scallions 2 stalks
- Garlic 2 cloves
- Dry White Wine 20 fl oz
- Parsley to taste
- Pasta shells 5 lbs
- Crème fraîche 3 tablespoons
- Salad Potatoes 4 pieces
- Ocean salt to taste
- Safflower Oil 4 tablespoons
- Fresh Rose Hips to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Without peeling the potatoes, cut them into small wedges and place them on a baking sheet, drizzle with olive oil, sprinkle with salt, and toss. Place in the oven for 40 minutes until golden brown, stirring occasionally.
Step 2
Meanwhile, heat the sunflower oil in a large skillet and sauté the finely chopped green onions and minced garlic for 10 minutes, add the wine and a few sprigs of parsley, bring to a boil, reduce the heat, and add the mussels. Cover with a lid. Cook for 5 minutes until the shells open, discarding any that do not open.
Step 3
Transfer to a colander to drain excess liquid into a bowl. Pour the liquid into a clean skillet, bring to a boil, and simmer until reduced by half. Lower the heat and add the crème fraîche, salt, and spices.
Step 4
Transfer the mussels to a small serving pot, garnish with sprigs of fresh rosemary. Serve with potato chips and the crème fraîche sauce.
