
Mussels in Coconut Milk

Description
If the mussels are uncleaned, soak them in salted water for 1-1.5 hours to allow them to absorb water and clean out sand and dirt.
Ingredients
- Pasta shells 5 lbs
- Onion ½ heads
- Celery stalk ¼ pieces
- Leek ½ pieces
- Lemongrass 1 stalk
- Coconut Milk 15 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the vegetables. For the leek, use half of the white part of the stalk.
Step 2
Place the mussels in a deep pot, layer the vegetables on top, season with salt and pepper, and pour in the coconut milk.
Step 3
Place on high heat for 5 minutes, remove from heat, cover the pot with a lid, and shake well to combine all the ingredients.
