- Vegetable Oil 1 tablespoon
- Onion 1 head
- Potato 1 piece
- Eggplant 1 piece
- Champignon Mushrooms 10 oz
- Red curry paste 2 tablespoons
- Vegetable Broth 5 fl oz
- Coconut Milk 15 fl oz
- Cilantro to taste
Step-by-Step Guide
Step 1
Heat the oil in a large pot, add the onion and potato.
Step 2
Cover with a lid, then simmer for 5 minutes until the potato is soft.
Step 3
Add the eggplant and mushrooms and cook for a few more minutes.
Step 4
Add the curry paste, broth, and coconut milk. Bring to a boil and simmer for 10 minutes or until the potato is cooked.
Step 5
Sprinkle with cilantro and serve with rice or bread.
