  • Cod fillet 5 oz
  • Clarified Butter 0 fl oz
  • 20% Sour Cream 0 oz
  • Potato 0 oz
  • Garlic Scapes 0 oz
  • Tomatoes 0 oz
  • Garlic 0 oz
  • Thyme 0 oz
  • Ocean salt 0 oz
  • Chervil 1 sprig

Step-by-Step Guide

Step 1

Prepare the sauce: reduce the melted milk by half, then stir in the sour cream, add salt, thyme leaves, and a bit of lemon zest. Bring to a sauce-like consistency.

Step 2

In the sauce, heat the pre-prepared vegetables: cut the roasted potatoes into wedges. Blanch the tomatoes and cut them as well. Finely chop the garlic scapes and warm them in the sauce, although you can also blanch them beforehand.

Step 3

Prepare the cod fillet and pat it dry.

Step 4

Sear the skin side for 7 minutes, then transfer to the oven for 5 minutes without removing from the skillet or flipping to the other side. Cod should only be cooked on one side.

Step 5

After searing, pat the steak dry with a paper towel to remove excess fat.

Step 6

Place the sauce with vegetables in the center of the plate and carefully top it with the cod, garnishing with a sprig of chervil.
