Ingredients

  • Wild rice 5 oz
  • Green Lentils 5 oz
  • Onion 1 piece
  • Canned Corn 4 tablespoons
  • Sun-Dried Tomatoes 1 tablespoon
  • Olive Oil 3 tablespoons
  • Salt ½ teaspoon
  • Black Pepper to taste
  • Ground coriander to taste
  • Cumin to taste
  • Thyme to taste
  • Avocado ½ piece
  • Cherry Tomatoes 5 pieces
  • Black grapes 5 pieces

Step-by-Step Guide

Step 1

Rinse the rice and soak it in water in a ratio of 1:2.5, bring to a boil, and simmer for 20 minutes.

Step 2

Rinse the lentils, soak them in water in a ratio of 1:2, bring to a boil over medium heat, and simmer for 15 minutes.

Step 3

Chop the onion into small cubes. Sauté in oil over medium heat, stirring, until golden brown.

Step 4

Add the rice and lentils to the onion, mix, add a little water, and sauté for 10 minutes.

Step 5

Add the canned corn (drained), salt, pepper, cumin, coriander, and thyme. Mix, cover, and sauté for another 20 minutes.

Step 6

As the rice and lentils absorb water and become softer, add water as needed and stir.

Step 7

Peel and dice the avocado into small cubes, and cut the cherry tomatoes and grapes in half. Lightly sauté the avocado, tomatoes, and grapes, then add them to the mujadara.

Step 8

Let it sit for 10 minutes before serving.
