Ingredients

  • Cod fillet 15 oz
  • Onion 1 piece
  • Orange Bell Peppers 1 piece
  • Couscous 5 oz
  • Cilantro ½ bunch
  • Lime 1 piece
  • Red Curry Powder 2 teaspoons
  • Toasted Cumin Seeds ½ teaspoon
  • Nigella Seeds ½ teaspoon
  • Coriander essential oil ½ teaspoon
  • Yellow Mustard Seeds 1 teaspoon
  • Turmeric 1 teaspoon
  • Chopped almonds 0 oz

Step-by-Step Guide

Step 1

Mix the spices in the specified proportions. In a heavy-bottomed skillet, heat 2 tablespoons of vegetable oil, add half of the spice mixture, and wait for it to blend with the oil and start releasing its amazing aroma! Stir the spices slightly to ensure the oil fully coats them. *If you like it spicier, you can add a bit of red chili pepper at this stage.

Step 2

Add the sliced onion and bell pepper to the skillet, mix with the spices, and sauté for 7-10 minutes until the vegetables are slightly softened.

Step 3

While the vegetables are sautéing, bring water to a boil, add the couscous to a pot, lightly salt it, and drizzle with half a tablespoon of olive oil. Pour boiling water over it and cover with a lid, letting it steep. Remember, you do not need to cook the couscous!

Step 4

Now carefully place the cod, cut into small pieces, on top of the vegetables. Sprinkle with the remaining half of the spices and lightly salt. You can add a little water, cover with a lid, and simmer for 15 minutes until the fish is cooked through.

Step 5

While the fish is simmering, prepare the topping. Mix finely chopped cilantro with almond flakes and the zest of half a lime.

Step 6

Serve the couscous on a plate, topped with the fish and vegetables. Drizzle the couscous with the sauce from the skillet and sprinkle everything with almonds and cilantro.
