Ingredients
- Pumpkin 20 oz
- Tomatoes 4 pieces
- Turnips 2 pieces
- Onion 2 heads
- Garlic 3 cloves
- Olive Oil 4 tablespoons
- Ocean salt 1 teaspoon
- Dried Yellow Plums 10 pieces
- Dried Apricots 5 pieces
- Turmeric 1 teaspoon
- Ground Cinnamon ⅓ teaspoon
- Toasted Cumin Seeds ⅓ teaspoon
- Toasted Cumin Seeds ½ teaspoon
- Coriander essential oil ⅓ teaspoon
- Ground Nutmeg ⅓ teaspoon
- Cilantro 1 tablespoon
Step-by-Step Guide
Step 1
Peel all the vegetables, slice the carrots thinly. Cut the pumpkin, tomatoes, and onion into large cubes. Coarsely chop the garlic, dried apricots, and prunes.
Step 2
Heat the oil in a saucepan. Add the carrots and spices, cooking over medium heat, stirring until they are browned.
Step 3
Then add the onion. Stirring, sauté until the onion is translucent.
Step 4
Add the remaining vegetables (pumpkin, tomatoes, and garlic), herbs, and salt.
Step 5
10 minutes before the end of cooking, add the dried fruits.
